Healthy, clean breakfast sausage, a tasty protein for your balanced breakfast.
Have you ever tried to find breakfast sausage that doesn’t have added sugar? Uh, let me just cut straight to the chase and tell you it’s nearly, if not totally impossible! I have yet to find it in a store. I haven’t cared too much about that, because I tend to eat eggs almost every day for breakfast, sausage just doesn’t have a huge appeal to me. But, one day I went to the fridge to discover we were out of eggs and I needed a protein replacement. It got me thinking about what other proteins could you have instead of eggs, and homemade sausage fits that bill.
I’ll admit my family doesn’t share my same love of eggs, and they sometimes want something else.
Weird, I know. *sarcasm*
I also know some people can’t eat eggs, and so they have a difficult time deciding what protein to eat for breakfast. So for all you people…this recipe is for you!
What surprised me the most about making my own breakfast sausage is how easy it actually was. When I first had the thought to try and make my own, my insides cringed a little because it just sounded like a lot of work. The biggest trick here is to not overcook it. I chose a leaner, organic beef, which can easily dry out if overcooked even a smidge. Cook it the same way you would a burger and it will turn out perfectly!
For a balanced breakfast I eat about 4oz of protein served with a huge side of veggies and a piece of fruit. When I started eating clean I measured out my proteins and fats. I was surprised what those sizes actually look like, and it helped me keep portions where they should be. I never measure veggies, I just fill up the rest of my plate and if I’m still hungry I add more. No matter what your body goals are there is no such thing as overeating veggies. Ever. Here I sprialized some sweet potatoes and sautéed that with diced onions and sweet pepper. I also added some greens to fill up the rest of my plate.

What are your egg substitutes for breakfast?
- 1 lb ground meat (pork, turkey, beef, just about anything will work)
- 1 tsp ground pepper
- 1 tsp dry mustard
- 1 tsp fennel seeds
- 1 tsp dried sage
- 1 tsp smoked paprika
- 2 tsp salt
- Mix all ingredients thoroughly together. Shape into small patties, indenting the center of each patty with your thumb.
- Warm a skillet with 1 tsp oil over medium/high heat. Cook each patty until browned on both sides 3-5 min, and cooked all the way to the center.
