When I build my plate for any meal I usually have 1 serving of meat (about the size of the palm of my hand), and fill the rest of my plate with vegetables. I typically try to serve 2 different types of vegetables (as side dishes), especially when I’m feeding kids.
I figure, if they don’t like one of the vegetables they can fill up their belly on the other. Kids like choices. I like choices. I’m all for making meal time easier, introducing new vegetables to kids, and getting them to actually eat veggies.
This Greek Salad is the perfect side dish to almost any meat. You can add tomatoes if you love them. Or you could add some chicken to this salad and call it a complete meal by itself. Either way, this is a delicious way to pack veggies into any meal.
- ¼ C olive oil
- ½ lemon, juiced
- ½ tsp oregano
- ¼ tsp garlic powder
- ¼ tsp marjoram
- ¼ tsp thyme
- 2 cucumbers, quartered and sliced
- ½ onion, diced
- ½ - 1 C Kalamata olives, pitted
- 1 red pepper, diced
- 1 yellow pepper, diced
- Combine dressing ingredients, and adjust seasonings to your taste. Combine salad ingredients. Toss salad with dressing and serve cold.
