I’m a foodie, and I hope you guys know that by now. When I think about food I think about what goes well together. What tastes combine to make a new taste? What flavors balance each other out? I think about food a lot! ha ha! And I tell you, there was a lot of thought that went into this Kale with Orange Salad. My though process might be silly, but dang…this salad turned out DELICIOUS!
For many people kale is just too bitter and strong tasting. Even if you’ve had that experience with kale I still say try this salad! Give it one more shot. I did two things here that make kale awesome. 1. I drizzlde about 1 Tbsp of olive oil on the kale and then massagde it. Yup, you read that right I massaged the kale! This evenly distributes the olive oil, and then it takes some of the bitterness out of the kale. Then 2. I added something citrus. Here I added orange, and then at the end I squeezed fresh lemon juice all over the salad. The touch of sweetness from the orange and the sour lemon balance out the bitterness and the flavors are just a really great combo!
If your entire family doesn’t love kale the way I do it is EASY to tweak this meal to fit your family’s tastes. Here’s what I did for my youngest. He still ate the chicken, avocado and quinoa. I ran out of orange so I added grapes and strawberries instead. Pretty simple. I refuse to make 2-3 extra meals for people, but making a simple swap is okay in my book.
On my plate I added grilled chicken, avocado and some quinoa to balance out my macros. For me that was 1/2 an avocado (50g), 4 oz of chicken and 1/4 C quinoa. - handful of kale, ribs removed
- 1 Tbsp olive oil
- 1 orange, peeled and sliced
- 4 oz grilled chicken
- ¼ C cooked quinoa
- ½ avocado, sliced
- ¼ lemon squeezed for juice
- salt and pepper
- Take kale and drizzle oil over it. Massage oil into kale to evenly distribute.
- Top with orange, chicken, quinoa, avocado.
- Squeeze lemon juice onto salad.
- Season with salt and pepper.
