This chicken salad takes minutes to put together and is easy to take with you when you need a meal on-the-go.
Still today, my biggest struggle eating clean is while we’re traveling. I am a serious foodie at heart and I would love nothing more than to travel, and eat my way through exotic places. I’ve done exactly that most of my life! I’ve come to learn that there are some things that are TOTALLY worth it (Nutella crepes in Paris, all the things in India, and I can’t forget eggplant sandwiches in Cairo). On the flip side there are many places where the focus isn’t on the food, and the available food isn’t special, nor worth the gut ache I might have later. I’ve been trying to pack food with us, and this chicken salad is one I packed into a recent visit to Zion National Park.

Yes, she’s 60+ years old and off-trailing it with us in the snow. Note we all have packs on, so I literally mean I “packed” this Chicken Salad into Zion with me. Just don’t forget to bring a fork!
You’ll notice I packed the chicken and dressing separately. I did this until we were loading our backpacks for the hike that day. Then I threw everything into individual servings in tupperware. This would work really well for packed lunches for work, or wherever you need to go. Have everything prepped separately in bigger containers in your fridge, then just portion out an individual serving that morning. That way things don’t get soggy. The chicken I used here was just a rotisserie chicken I had pulled apart. My simple skillet chicken would be another great option. And for dressing I simply used Tessemae’s, a brand I love because of their clean ingredients.

- Green salad mix
- ½ red onion, finely chopped
- handful of carrot shreds
- handful of mini sweet peppers, chopped
- Rotisserie chicken
- Store bought salad dressing
- Combine all ingredients, divide into individual servings, and enjoy!
