Chicken salad with fresh, sweet pineapple, crunchy celery and onion. Tastes so delicious during the summer.
I’m that person that eats at restaurants and when I find something I love I instantly start thinking about how I can make that dish at home. I also dream up delicious ways to make a clean version of the dish, skipping on all the preservatives and sugar. A few weeks ago I ate lunch with my in-laws at Jason’s Deli. I love that they’ll take any sandwich and turn it into a lettuce wrap or even a salad. I had the pineapple chicken salad sandwich wrapped in lettuce, skipped the bun. No, this isn’t a sponsored post, I just like the deli.
A few days later I was craving that chicken salad and decided to make my own version of it. Besides being totally delicious, the best part about this recipe is you can whip it together in under 10 minutes. I’ve made this a few times, and you can easily eat this on bread if you’re into that, or on a bed of romaine or spring mix. I left the slivered almonds off my version, but you can easily add them for another layer of flavor and crunch.
One weekend I premade the chicken salad for a rafting trip, and just stored it in a cooler. Then when we were on the raft (during a slow point) I made sandwiches for everyone. I ate mine on a bed of lettuce like pictured here. Easy peasy. This is also perfect for work lunches, picnics etc. Just leave out the almonds and sandwich bread until you’re ready to eat so they don’t get soggy.
For the chicken I used a rotisserie chicken. If that’s not available try my Simple Skillet Chicken, just wait until it cools to use it in the recipe. Always, always, always use fresh pineapple. It makes a huge difference to have those little bursts of sweetness. I use Primal Kitchen Mayo, or even make my own. And one more note: If you’re making this to eat on a bed of lettuce it serves 3. You will need the extra calories if you’re skipping the bread. When I serve it on bread it definitely goes further and serves about 6. Hopefully, you’re catching my drift here.
- 12 oz rotisserie chicken, diced
- 3 celery stalks, finely chopped
- 1-2 C fresh pineapple, finely chopped
- ⅓ - ½ red onion, finely chopped
- 3 Tbsp mayonnaise
- lettuce or bread
- Combine all ingredients, salt and pepper to taste. Serve cold on either a bed of greens or bread.
