One of my favorite things to do is take a restaurant dish I love, then recreate it in my own kitchen. I especially like recreating a healthy version, where I know exactly what the ingredients are (no sneaky sugar!). I call these my clean copycats!
If you live in Utah, Arizona, Colorado, Idaho, or Nevada you may have eaten at a Rumbi Island Grill, one of my favorite places. It’s sort of like an upscale fast food chain. Think fresh salads, pulled pork sandwiches, rice bowls and more. I love this place!
One of my favorite dishes is their Aloha Mango Salad, which comes with your choice of meat (shrimp, chicken, pulled pork or steak). The kicker to this salad is the delicious, tangy and creamy mango-passion vinaigrette dressing. It gives the salad its signature taste.
Lucky for me (and you!) I came up with a dressing blend that is pretty spot-on to Rumbi’s. Even better, you know what the ingredients are, which of course are healthy! Try this dressing and let me know what you think. When building your salad try whatever protein you have on hand. I used my Paleo Pulled Pork (click to find recipe) and it was a perfect fit for this salad. For the mayo in the dressing try my Paleo mayo recipe (click to find recipe). I always have a jar on hand. I left out the cheese and tortilla strips to clean up this dish even more.
We loved the mango dressing so much we ended up using it in pulled pork lettuce tacos, turkey wraps, and as a delicious veggie dip.

- Salad Ingredients:
- Romaine lettuce blend
- Fresh mango, diced
- Red sweet pepper, chopped
- Red onion, chopped
- Pulled pork
- Mango Dressing Ingredients:
- ¼ Mango
- ¼ C Paleo mayo
- 4 tsp Ginger, freshly grated
- 2 tsp Garlic, minced (from a jar)
- 1 Tbsp Vinegar
- Splash of hot sauce
- Toss salad ingredients together.
- Combine dressing ingredients (except salt) in a small food processor, pulsing until creamy and well combined.
- Add salt to dressing to taste.
- Serve salad with mango dressing.
