Everyone loves a simple, easy to make meal. Take any leftover and turn it into something completely new by putting it in a sweet pepper, topping it with an egg, and baking it. Here I used leftover Paleo Ham Fried “Rice”, but really any dish will work for this. And of course, this is a great way to pack more vegetables into your breakfast!
- Bell peppers, cut in ½
- Any leftover dish
- 1 egg per ½ pepper
- In a microwaveable dish place peppers cut side up. Cover the bottom of the dish with water, and microwave for 5 min.
- Fill peppers with leftovers and make an indent large enough to fit an egg.
- Crack an egg into each stuffed pepper.
- Bake at 400 deg F for 15-25 min. Cooking time will greatly depend on the size of your peppers.
