This salad, layered with arugula, watermelon, orange, grapefruit, goat cheese and red onion is so cool and fresh on those hot summer nights.
One of my favorite things about summer time is cold slices of watermelon. It’s taken me years to figure out how to pick a good one. My mother-in-law taught me to pick it up and hold it on your hip (like you would a small child) and then pat it a few times. You want one that jiggles, and trust me, you’ll have to hit several of them to be able to tell the difference. The jiggle is all the water inside, which means you’ll find a ripe juicy one.
Watermelon is great on it’s own, but I often find myself a little bored with it by the time we’ve eaten our way through an entire watermelon, sometimes that takes up to a week! On about day 3 my watermelon citrus salad is a great way to switch things up.

My pro tip with cutting watermelon is to use a watermelon slicer. They’re pretty inexpensive and super easy to use. It will cut down on the time, mess and frustration for sure!! The thing I like the most is that the rind will keep all the juice contained. No more sticky counter top to clean!

Now back to the salad. Once you’ve cut up all the fruit it’s really quick and easy to assemble. I love the different flavors of arugula, citrus, goat cheese and red onion. They all have somewhat strong tastes, but balance each other out beautifully. If you’re doing a round of Whole30, simple leave out the cheese and you still have a delicious salad. - 2 Handfuls arugula
- 2 Handfuls watermelon, diced
- 1 Grapefruit, sliced
- 2 Oranges, sliced
- ⅛ red onion, thinly sliced
- 2 Handfuls goat cheese, crumbled
- pinch of fresh basil, finely chopped
- 2-4 Tbsp olive oil
- Layer the arugula, watermelon, grapefruit, oranges, red onion, and cheese together.
- Season with fresh basil, salt and pepper.
- Drizzle with olive oil and serve cold.
